Wild Honey Inn Restaurant Review: ‘Here is something rare in Ireland – classic fine dining in a pub setting’

Arnold Bennett may have fallen out of favor as a novelist, but his legacy lives on in the form of the omelette created for him by Jean Baptiste Virlogeux, a chef from the Savoy in London, during Bennett’s stay at the hotel. as he looked for the second of two books he put down there. A rich combination of eggs, smoked haddock and cheese, the Savoy kitchen has been serving it ever since.

melette Arnold Bennett is not a dish you often see on Irish menus. So when we spot it as part of the breakfast offering at Aidan McGrath and Kate Sweeney’s Michelin-starred ‘pub-restaurant’ in Lisdoonvarna, there’s no question we’ll order it or not. McGrath makes his version with Gruyère — at the Savoy, the cheese is Parmesan — and serves it flat and chilled. It’s as decadent as it sounds, a classic dish in keeping with the style of food we enjoyed for dinner the night before.
