Rosewood as a brand prides itself on creating a sense of place, and the menus at Las Brasas de Castellana all-day dining restaurant are full of traditional Spanish dishes. You can order churros con chocolate for breakfast, or maybe huevos rotos. At lunch, enjoy tapas and grilled meat and fish. For afternoons by the fire, order a cake or two from the colorful display of homemade Flor y Nata pastry, while at night you can retreat to the low-lit O Tarde bar for 72-hour infused Negronis. in clay pots.

The Amós signature restaurant is run by Jesús Sánchez who owns a three star Michelin restaurant called El Cenador de Amós in Cantabria. Here he celebrates northern Spanish cuisine, elevating Cantabrian ingredients such as anchovies and squid, as well as cheeses from Tierruca and vegetables from Navarrese gardens. It celebrates traditional cuisine and offers a hearty artichoke and thistle soup on the tasting menu alongside more refined dishes, such as pigeon mousse coated in beetroot powder.

The neighborhood

Set back from the bustling Paseo de la Castellana, which crosses the city from north to south, the Rosewood Villa Magna is right in the heart of upscale Salamanca and just steps away from some of the city’s most extravagant shopping streets. Madrid: Calle Serrano, where you can buy Manolo Blahnik shoes and Gucci, Prada, Max Mara, Salvatore Ferragamo, Armani and Yves Saint Laurent clothes; and Calle José Ortega y Gasset where you will find jewelers such as Cartier, Tiffany and Bulgari.

The service

The hotel was still open when I visited and the service had not settled into the five star standard expected of Rosewood. I’m sure once the hotel hits its stride, everything will be like this.


Recyclable wooden key cards reduce plastic waste and look great. A Nordaq filter machine provides all the water for the preparation, which is presented in glass bottles, reducing up to a ton of plastic per year. The hotel also plans to create its composting system from organic waste. Hotel toiletries are in refillable glass bottles.
