Enjoy Florentine cuisine at Waldorf Astoria’s Italian restaurant, which is an offshoot of the three-star Michelin restaurant Enoteca Pinchiorri
The artisan hails from the rolling fields of Tuscany, the glittering coast of Almafi and the affection and history found in the enchanting land of Italy. The stunning restaurant, which seats up to 72 people, has been nestled inside the luxurious Waldorf Astoria at DIFC since July 2020 and has rekindled a spark of passion and heartfelt service to the modern metropolis that is Dubai.
It’s an offshoot of Florence’s three-star Michelin Enoteca Pinchiorri and celebrates Florentine cuisine and signature drinks in a refined, relaxed atmosphere.
L’Artisan is best known for “holding a modern microscope to the most iconic and beloved dishes”. Fresh oysters, Puglia burrata, Patagonian squid, yellowfin tuna tartare, Tuscan pecorino and black truffle gnochetti, stewed beef cheek, baked scallops, among others, are the highlights of the menu.
Francesco Magro is the Executive Chef and has been part of several Food and Beverage (F&B) operations such as Atmosphere at Burf Khalifa, Rheinfelden in Germany and The Address Boulevard Hotel in Dubai. His adoration for the culinary arts is what led Francesco to success and the title he holds today.
Francesco recommends that diners have an immersive experience about Italian cuisine. “For example, the region it comes from can say a lot about the dish. The reason is that each dish is the representation of the region: the history, the tradition and the culture. In Trapani, Sicily, you can find couscous. It shows the influence of the Persians when they colonized Sicily years ago,” he says,
“Ingredients can only be found in certain regions during certain seasons. The “radicchio tardivo” from Veneto is only found from December to February, or the more famous “Tartufo d’Alba” from Piedmont from November to the end of January. For most of my dishes, the key ingredients involve adding good quality extra virgin olive oil and citrus fruits, which are great for balancing out the flavors. My last ingredient, I believe, that you cannot find on the market, is my team. Without a solid and passionate team, we cannot make successful dishes,” he adds.
Ech plat has been reinvented for a contemporary and cosmopolitan palate?
“It’s all about memories. However, I am inspired by everything around me. The music I listen to, the ingredients that surround me that day, the people that surround me. The emphasis is on the flavor of the traditional dish. The flavor should remind you of a taste you have experienced before, like something you tried for the first time that made a lasting impression on your taste buds. Then the team and I come up with different ways to present the dish.
Artisan’s pizzas have proven popular since the Covid-19 induced lockdown restrictions as they are fermented for 72 hours.
Sous chef Leonardo Galati, who has worked in fine dining restaurants in Spain, the United Kingdom (UK), Mexico, the Cayman Islands and the United Arab Emirates, complements Francesco to add a touch of spice to every dish .
The spacious DIFC dining room is decorated in soothing shades of gray combined with delicate pendant lighting: crockery, cutlery and furniture are all Italian made.
