Brought to you by powerful Italian couple Alessandro and Anna Pavoni (Ormeggio at The Spit), a’Mare is the shining gem of Crown Sydney’s restaurant portfolio. Despite being located inside a hotel and casino, the new Italian gourmet restaurant promises a refined evening without pretension. You’d think the uninterrupted views of glittering Barangaroo Bay and the glamorous, palace-inspired interiors would detract from what goes on the plate. But fine dishes are just as demanding as their surroundings. Take the squid ink risotto, for example, which is dark and bold and topped with a crisp buttermilk and egg emulsion. Or the signature cotoletta – an impressive 1 kg grissini crusted veal cutlet to share. There is no shortage of theaters either. A memorable basil pesto is prepared next to the table in a large Carrara marble mortar; while the ice is hollowed out and topped before your eyes. It’s an elegant experience that justifies the hefty price tag.
